Grease and flour (or use pan spray with flour) to prepare your giant cupcake pan. In small bowl, dissolve instant coffee in water; stir in cocoa powder and mix well. Set aside to cool. Stir together flour, baking soda, baking powder and salt; set aside. In large bowl, beat butter, granulated sugar and brown sugar with electric mixer until light and fluffy. Beat in eggs, one at a time. Add vanilla; mix well. Combine cocoa mixture and sour cream. Add flour mixture alternately with sour cream mixture, beginning and ending with flour mixture, beating after each addition until smooth. Fold in chocolate chips. Spoon 4 1/2 cups batter into top of cupcake pan; spoon remaining batter into bottom of pan. Bake 60-70 minutes or until toothpick inserted into center comes out clean. Cool cake in pan on wire rack 15 minutes. Turn cake onto wire rack to cool completely. To assemble cupcake ice top of cake's bottom half. Place top half of cake atop iced bottom half. Decorate as desired. DAY 1 Will bring the opportunity to learn new skills while taking a full day kayak trip along the coastline where lunch can be taken on a secluded and idyllic bay. You'll get the chance to explore some of the most beautiful sheltered bays, coastline and harbours of Pembrokeshire. and there'll be mysterious and awe inspiring caves to be explored and wildlife to be spotted. On a skills level you'll develop an efficient forward paddling stroke, you'll master turning your kayak, and gain confidence to take your skills and experience to the next level. In the evening after a well-earned meal it's time to chill out at the comfortable lodge. For the perfect 'apres kayak' feeling we recommend unwinding in front of one of the wood burning stoves, glass of wine in hand, mulling over the excitement of the day and looking forward to the adventure ahead. DAY 2 You will get the chance to develop your existing kayaking expertise - you can work on your own personal paddling skills and if you choose you can learn a little more about rescue and safety techniques. There'll be a trip around a different section of the coast - with over 185 miles of stunning and varied coastline you really are spoilt for choice! If there are waves you can visit a local surf beach where you can try your hand at surf kayaking - ultimate thrills guaranteed! Sunday evening you'll pack your bags and with a teary eye depart for home. But never fear, once bitten by the Pembrokeshire sea kayaking bug you are certain to be back for more? ACCOMMODATION All adventure guests stay at an Eco Lodge located in five star adventure centre set in an acre of land; a beautiful location with just a one mile walk through National Trust woodland to a local beach which is stunning, unspoilt, and a place where seals sometimes sleep. The lodge has a range of cosy bedrooms, from doubles through to group rooms sleeping eight. The lodge is kept warm and cosy all year round, with a comfy lounge that has a picture window with an inspirational view, under-floor heating courtesy of the ground source heat pump, and is equipped with a delightful wood burning stove - ideal for experiencing that 'post adventure' glow! The bar and dining area has a pool table and an incredible music system which you can plug your ipod straight into. The bar is well stocked with a wide range of tipples to suit everyone, including local and organic brews. Tasty meals are served, and tea, coffee and cold drinks are available to help yourself to at all times. Food is home cooked, wholesome and delicious, and special diets are happily catered for. The traditional Pembrokeshire courtyard is perfect for warm summer evenings or for watching the beautiful sunsets, or you can enjoy beers around a blazing bonfire in our sheltered garden for awe inspiring nights out under the stars. The lodge accommodates up to 38 people and has an atmosphere of homeliness and comfort. If you want to sample the local village pub, in the small and friendly hill top village of Mathry, it's just a short walk from the lodge and will give you a real taste of rural Welsh life. Whether the sea is flat calm and reflecting the suns rays like a mirror, or raging and boiling as the waves pound the cliffs base, a superb coasteer can be guaranteed, with the emphasis on cliff jumping, wave dodging and rock traversing shifting according to the conditions; no two coasteers are ever the same. So, if you've been there, done that, with white water rafting and bungee jumping - you'll find coasteering the Pembrokeshire coastline provides a new and refreshing slant on adventure! WHAT HAPPENS ON A WICKED LIQUID BREAK? In the course of your 2 day break our fully qualified instructors will help you boldly go where you have never been before! You will take 2 coasteering sessions at 2 different venues. Your third activity will be a COASTAL HIKE. The lodge has a range of cosy bedrooms, from doubles through to group rooms sleeping eight. Height restrictions do apply, kids do need to be 114cms tall or over, in order to utilize the adventure equipment on offer. MONDAY - Arrive in time for a home cooked lunch, followed by a half day COASTEERING, the ultimate coastal adventure - climb, swim and jump into a whole new world. Sea caves and swirling ocean swells combine to produce a truly wild environment. Watch out, it's addictive! TUESDAY - We recommend getting stuck in and taking two half day adventures today. You'll try SEA KAYAKING; where rocks, caves, seals, birds, waves, surf, beaches, harbours and much more make Pembrokeshire a real sea kayaker's paradise, and SURFING Pembrokeshire beach breaks, basing yourself at a beautiful sandy beach. WEDNESDAY - We'll leave this day free for you to take some time to explore at your own pace. Our local sandy beach, Abermawr, is just a short walk through the bluebell woods and can offer you rock pools, idyllic views, safe swimming and unspoilt tranquility; it's the perfect spot for a family day out. Pembrokeshire also offers a plethora of activities to suit the needs and interests of all the family; whether it's a boat trip around an off shore Island, a horse ride on a beach, a fishing trip, or even some badger or bat watching, we can point you in the right direction. THURSDAY - Today you'll choose your favourite activity from the adventures above and get the chance to hone your skills! Then you'll round your adventures off with a COASTAL HIKE, we have the world renowned Pembrokeshire National Park Coastal Path on the very western tip of Europe right on our doorstep. Unwind amidst the spectacular cliff top scenery and chill out amongst the wild flowers - it's the perfect accompaniment to the adrenaline charged adventure activities. FRIDAY - Depart after breakfast. NB This is an outline itinerary, and is therefore subject to change according to your own preferences and to weather and tides. Please contact us if you have any questions or requests. WHAT CAN WE DO IN THE EVENINGS? After supper in the evenings you'll be free to make the most of our awesome location, a walk through the bluebell woods to the beach comes highly recommended, and we'll have a bonfire under the stars for you on one of the evenings. The Preseli Venture eco lodge is a great place to hang out in the evenings, we have a big pile of games and books, plenty of safe outdoor play areas for kicking a ball around, we have a fully licensed bar so if the adults fancy a bevvie they're most welcome, and if the kids really can't live without internet access we have wireless broadband! ACCOMMODATION All adventure guests stay at an Eco Lodge located in five star adventure centre set in an acre of land; a beautiful location with just a one mile walk through National Trust woodland to a local beach which is stunning, unspoilt, and a place where seals sometimes sleep. The lodge has a range of cosy bedrooms, from doubles through to group rooms sleeping eight. The lodge is kept warm and cosy all year round, with a comfy lounge that has a picture window with an inspirational view, under-floor heating courtesy of the ground source heat pump, and is equipped with a delightful wood burning stove - ideal for experiencing that 'post adventure' glow! The bar and dining area has a pool table and an incredible music system which you can plug your ipod straight into. The bar is well stocked with a wide range of tipples to suit everyone, including local and organic brews. Tasty meals are served, and tea, coffee and cold drinks are available to help yourself to at all times. Food is home cooked, wholesome and delicious, and special diets are happily catered for. The traditional Pembrokeshire courtyard is perfect for warm summer evenings or for watching the beautiful sunsets, or you can enjoy beers around a blazing bonfire in our sheltered garden for awe inspiring nights out under the stars. The lodge accommodates up to 38 people and has an atmosphere of homeliness and comfort. If you want to sample the local village pub, in the small and friendly hill top village of Mathry, it's just a short walk from the lodge and will give you a real taste of rural Welsh life. From here you can look out over the Preseli Hills; the source of the 'bluestone' of Stonehenge.
